How to make Pearl Bubble:

STEP 1
Bring 7000cc of water to a boil(100).

STEP 2
Put 1kg of tapioca boba into the pot, stirring constantly.

STEP 3
Until the tapioca boba float on the water, count down for mins(See Table).

STEP 4
Cover the lid, but make the pot cover opening a little bit.
Reminder: tapioca boba are cooked at or just below the boiling point of water(Rolling Boil).

STEP 5
Stir the tapioca boba constantly to make sure they do not be sticky.

STEP 6
Turn the heat off and cover the pot. In the meantime, move the pot away the stove.
Count down for another mins(See Table).

STEP 7
Use a colander to strain the tapioca boba and then rinse them with purified water until the water runs clear.
Reminder: at the moment, the temperature of tapioca boba is between 40℃and 50℃.

STEP 8
Gently shake the colander to remove any excess water and place cooked tapioca boba in a plastic food container. Add some granulated sugar or dash of honey syrup.
Reminder: after a while, in case cooked tapioca boba are sticky, please pour some dilute sugar or dilute honey syrup.
